René Bolvig assumed responsibility for the management of Moltke’s Palace on 1 August 2005.
He brought with him a number of permanent staff members and has enjoyed a long and successful career in the restaurant business:
René trained as a chef at one of Copenhagen’s premier hotels, Hotel d’Angleterre, and has enjoyed top posts at several of the best restaurants in Copenhagen and North Zealand. In 1985, he opened his own restaurant, Remis, and later worked as executive chef at Belle Terrasse and Nimb in Tivoli Gardens, restaurant manager and chef at the Imperial Garden & Brasserie and most recently as director for Bojesen at Base Camp.
Over the course of his career, René has been awarded the title of Chef of the Year in 1994 and received the Ejler Jørgensen Award. He also boasts an honorary diploma from the Danish Academy of Gastronomy, has participated actively in the professional cooking school chef’s training programme and has most recently co-edited and provided consulting services on the republication of the Cookbook (Kokkebogen).
